Pumpkin Chocolate Chip Cookies

My husband loves custard.  This is not a post about custard though.  I offered to make him custard, from scratch, over a hot stove.  He said no thanks, he likes custard made from Bird's Custard Powder.  Whats even worse, he likes it runny.  With canned fruit cocktail mixed in.  How am I married to this man?

I mean, I love his dearly and with all my heart.  He is by far the greatest thing to ever happen to my life (basically tied with Scrunches).  But the man has weird taste in deserts.  Heck, he doesn't even like pumpkin. He doesn't like pumpkin.  I love pumpkins though, so this post is all about that. :)

I was sitting at home on a cold and blustery upper midwestern October day and thinking, "wow it is cloudy out, and I really need to get a halloween costume for Scrunches."  This led to some amazon persuing, which led to ebook perusing and I thought how nice it would be to curl up on the couch, reading Allegiant, and eating something yummy.

So started searching the internet for recipes of something warm, baked and chocolatey.  I found nothing interesting.  Not even on pinterest.

Then my friend Hana showed me the light.  She said to make these cookies.  She said she makes them almost weekly and that they are easy.  That sounded promising.

These cookies are great fall cookies.  Pumpkin, chocolate and cinnamon.  What more could you want?  It makes your house smell like an autumnal wonderland.  My friend also gave me a great tip on these... try them cold.  She swore by putting them in the fridge and eating them that cold.  They are good warm, but cold they are amazing.

Pumpkin Chocolate Chip Cookies
Ingredients:

  • 1 cup canned pumpkin
  • 1 cup granulated sugar
  • 1/2 cup vegetable oil
  • 1 egg
  • 2 cups all purpose flour
  • 2 teaspoons baking powder
  • 2 teaspoons cinnamon powder
  • 1/2 teaspoon salt
  • 1 teaspoon baking soda
  • 1 teaspoon milk
  • 1 tablespoon vanilla extract
  • 2 cups chocolate chips (that is one bag)
  • 1/2 cup chopped walnuts (optional- I didn't use them)
Directions:
Preheat oven to 350 degrees F.  Line a baking sheet with parchment paper.

In a bowl combine pumpkin, sugar, oil and egg and mix well.  Set aside.  

In another bowl, mix together the flour, baking powder and salt. 

Dissolve the baking soda in the milk, and add this solution to the flour mixture.

Mix the flour mixture into the pumpkin mixture and combine well.  Then add vanilla, chocolate chips and walnuts (if using).


Drop in heaping spoonfuls on baking sheet and bake for about 10 min, or until the cookies are lightly browned and firm.  I took them out a little early and bit into one and it was still a little mushy in the center.  This meant I had to bake mine for about 13 minutes.


Allow to cool on baking sheet, or for chilled cookies, place baking sheet in the fridge and eat once cold.  These are pretty amazing with a glass of milk.
