Giant Double Chocolate Cookies

If a brownie ever had dessert reassignment so it could become a cookie, this would be the result: delicious.
A friend of mine told me recently that she made these cookies and that they were the most amazing thing ever.  They are a copycat recipe for Levain Bakery's double dark chocolate cookie.  I looked at the recipe and it seemed easy; I had all the ingredients in my cabinet already and it only used one bowl to make.  Simple.


It was not until I started rolling the cookie dough into balls that I realized how life changing this was going to be.

Oh. My. God.

See these cookies are no ordinary cookie.  They are HUGE.  They are filled with chocolate chips and to give it that added kick, the dough is chocolate too. I did not know about Levain Bakery before this recipe, but I can assure you that once I tasted the first cookie from this batch I immediately looked up more recipes for Levain Bakery style cookies.

If you warm this sucker for 10 seconds in the microwave, it will transport you to Heaven.


I think I mentioned previously that I have been healing up from back surgery.  So my time in the kitchen has been pretty minimal.  So I have not been baking a whole lot and last night I wanted cookies.  I kind of hate packaged cookies (unless they are Milanos or Petite Ecolier... I think I could live off of those), so I made a mental note to make these today.  It is now taking everything in me not to eat the entire batch before my hubby gets home.

Seriously, do yourself a favor and make these.  Also try not to make them when you are home alone or you may eat the entire dozen.



Okay, lets get baking!

Giant Double Chocolate Cookies

Ingredients:

  • 1 lb of unsalted butter (2 sticks)
  • 1 1/4 cup sugar
  • 2 eggs
  • 1/2 cup cocoa powder
  • 2 1/4 cup flour
  • 1/4 tsp coarse salt
  • 1 tsp baking powder
  • 2 1/2 cup chocolate chips
Directions:

Cream the butter and sugar with a mixer.  Incorporate eggs until well mixed, scraping the sides of the bowl as needed.  Add in cocoa powder and mix well.


Add flour in batches, mixing well each time.  I did this in about three installments.  Add in salt and baking powder.



Using a spatula, mix in the chocolate chips.  You may want to get your hands in the bowl and knead it well to ensure that the chocolate chips are well distributed through the batter.

Lots of chocolate chips equals happiness in your tummy.


The batter will be SO thick. I used an ice cream scoop to portion out the dough into roughly 1/2 cup increments.  They should be just a bit smaller than a pool ball.  Seriously.  These are GIANT cookies (as the name says).  Once you roll it into a ball, flatten it out a bit since it will not spread a whole lot in baking.

Really this is a BIG cookie.

Bake for 14-18 minutes at 350 on a cookie sheet lined with parchment paper.  My God, I love parchment paper.  But that is another post for another day.

When they are done baking, allow to sit on the cookie sheet for an additional 5 minutes then move the cookies to a cooling rack to finish cooling.
try to control yourself to wait while these do the 5 minute rest.  Its important for the cooking process.

These cookies are not your regular cookie.  To take it to the next level you can even use these cookies to make the most insane cookie sandwich by putting ice cream in the middle of two of these.  I did this with some banana chocolate gelato... wow.

Please ignore the ice cream smudges on the bowl.  those are driving me crazy in this picture.
